Wash and dry chicken pieces thoroughly with paper towels. Shake pieces in a paper sack with well-seasoned flour and completely coat each piece. Brown lightly on all sides in hot olive or Canola oil. Remove and place in a covered baking dish.Using the same pan that the chicken was browned in, pour off all but 2 Tbsp oil.Add 1 lb. fresh mushrooms and lightly brown.Add ½ pint sour cream, pinch of powdered rosemary, and ½ cup sauterne or dry sherry wine.Let simmer until sauce becomes smooth, a thin white sauce consistency. Add a little water if required.Pour over chicken and bake in a preheated 350 degree oven 1 ¼ to 1 ½ hours.Pairs with Risotto, fresh-baked French or Italian or rustic Amish bread.

These recipes are handed down for generations and offer a delicious alternative to typical baked Chicken dishes. Old Plantation Style Chicken has been very popular in the South, and while there are several versions of the recipe, the one that follows is served at the Old Southern Tea Room in Vicksburg Virginia, founded in 1941 with family recipes passed down since the days of slavery.
2 lb. broiler chicken, split in half (or two small fryers, split)½ cup flour1 cup milk4 Tbsp butterjuice of 2 lemons2 Tbsp dry sherry winesalt and pepper to taste½ lb. sliced mushroomsTabasco sauce to tasteWorcestershire sauce to taste.1 Tbsp flour
